Thai Salad with Sesame-Crusted Tofu

Here's what  you need.

Ingredients: 

FOR THE TOFU – 14 oz firm tofu – 3 tbsp soy sauce – 2 tbsp rice vinegar – 1 tbsp maple syrup – 1 tbsp sesame seeds OTHER – 3 cups mixed greens  – 1 cup shredded red cabbage – 1 cup shredded white cabbage – 1 cup shredded carrots – 1 red bell pepper – ⅓ cup packed cilantro – ⅓ cup packed Thai basil – 2 mandarin oranges  – ½ cup raw cashews – Asian Salad Dressing – lime wedges to garnish

Cube the tofu and add it to a skillet with the seasonings.

Sauté until crispy. Add the sesame seeds and set aside.

While the tofu cooks, make the Cashew Ginger Dressing.

You'll need: cashew butter, soy sauce, ginger, garlic, maple syrup, rice vinegar, lime juice, garlic, sriracha, and water.

Toss the salad veggies together. Top with tofu, cashews, and mandarin slices.

Drizzle the dressing over the top and you're ready to serve!
