Make a simple paste and break the tofu into chunks....

Carefully fold the nuggets into the paste...

Place the tofu on a lined baking sheet and cook at 400F for 30 minutes.

Next, saute an onion and add fenugreek, turmeric, garam masala, tandoori spice, and cardamom.

Add one can of unseasoned diced tomatoes.

Stir in garlic, ginger, cashew butter, maple syrup, and lemon juice.

Blend until smooth and then add 1 can of coconut milk.

Fold in the tandoori tofu after it's done baking.

Serve with rice and fresh cilantro!
