Preheat the oven. Make the Vegan Almond Ricotta (follow the instructions linked in the recipe)

Step 1

Spoon the almond ricotta into the center of a large baking dish. Place the tomatoes around the ricotta in the baking dish. Peel and slice the garlic and place it with the tomatoes.

Season the tomatoes with oregano, basil, nutmeg, salt, and pepper. Drizzle with lemon juice, balsamic glaze, and olive oil.
