Key Ingredients

– Dry Yeast  – Pizza Flour

Add warm water and sugar to a bowl. Stir to dissolve the sugar, add the yeast, and then let proof for 5 minutes.

In a large mixing bowl, combine the flour and salt. When the yeast is activated, add it to the flour mixture.

Stir the dough with a fork until mostly combined. Then use your hands to continue mixing.

Step 3

Place the dough on a clean, well-floured surface or cutting board. Knead the dough for about 5 minutes.

Step 4

Add a little more flour to the bowl you used earlier and return the dough to the same bowl.

Step 5

Cover the bowl with a lid, plate, or towel. Place the bowl in the refrigerator and let rise overnight (up to 48 hours).

Step 6

Place the dough on a floured cutting board. Cut the dough in half and form two round discs. Place the discs on the cutting board, cover with a clean kitchen towel, and let rise for one hour.

Step 7

When you take the dough out, place the pizza stone in your oven and preheat the oven. The pizza stone needs to preheat for at least 30 minutes!

Step 8

To stretch the dough by hand,  hold the dough like a steering wheel with your thumbs about an inch below the upper rim. Turn the dough in a circle and let gravity stretch it until it reaches the right size.

Step 9

Place the dough on the pizza paddle. Sprinkle a handful of flour cornmeal over the top of the pizza dough. Then flip the dough over so the flour side is down.

Step 10

Add your favorite toppings. Transfer the pizza from the paddle to the hot pizza stone . Cook for 7 to 8 minutes .
